Quinoa Crunch

Call this a lazy post but most things that I make are not something that just pop out of my head. Instead, I’ll give credit where I get recipes that I think are worthy enough to share. This Quinoa Crunch from Jillian Michaels’ ‘Master your Metabolism Cookbook’  is super easy to make and a nice alternative to the usually high sugar and expensive (if you’re buying top quality) granola. It has a light nutty flavor and adds a pleasing dimension to yogurt.

You’re not putting a ton on, but you are adding a slight amount of fiber, protein, complex carbs, and omega-3 fatty acids.

I tried to make two batches at once and it probably wasn’t a good idea. My layer on the baking sheet was too thick and so just the top of it came out crunchy -enough to break into pieces while the under layer wasn’t.

I also sprinkled cinnamon (a super spice full of health benefits) all over the top before putting it in the oven, I’ll definitely make it like that again.

Also this new yogurt I found is AWESOME! I also have non-fat plain greek yogurt but it’s nice to switch it up here and there.

Quick thought -you can use this crunch for more than just yogurt. I’m thinking salads, bread chicken /fish with it, sprinkle over veggies and fruit salad etc.
